A rum with a sense of place

Mill House Spirits began with a clear intention to make a rum that belongs to Waikapū. Our signature Maui Agricole Rum begins in fields of sugarcane adjacent to our distillery. We move from this cane to the finished spirit with care and attention at every juncture.

The result is a spirit tied to Maui, the ʻāina, the land, carrying the character of fresh cane and the distinct point of view of the people making it.

History still moves here

Mill House Spirits draws from Maui’s sugarcane history with respect and clarity. Old mill structures, archival photographs, and records of work highlight the resilience of human spirit and industrial ingenuity that shaped this landscape.

We are not trying to recreate the past. We are continuing a relationship between cane, craft, and place in a new form.

Our work today is rooted in close attention, deliberate process, and the belief that place should remain present in the final spirit.

Our custom continuous still gives us the ability to refine our rum with care while preserving the brightness and character that begin in fresh cane.

Rooted in Waikapū

Waikapū is more than the setting for Mill House Spirits. It is the origin point of the cane, the place of the work, and the home of the finished bottle.

That connection to the land is what gives our rum its identity and its sense of place.
