A rum with a sense of place

Mill House Spirits began with a clear intention to make a rum that belongs to Waikapū. Our signature Maui Agricole Rum begins in fields of sugarcane adjacent to our distillery. We move from this cane to the finished spirit with care and attention at every juncture.

The result is a spirit tied to Maui, the ʻāina, the land, carrying the character of fresh cane and the distinct point of view of the people making it.

Crushed from fresh cane

The heart of our Maui Agricole Rum is fresh-pressed sugarcane juice, not molasses. Immediately after harvest, the cane is pressed and the juice moves quickly into fermentation.

This freshness matters. It keeps the character of the cane present from the first step forward, giving the final spirit its brightness, texture, and distinctive sense of origin.

Crafted step by step

Every stage of production asks for judgment. Our custom continuous still gives us the ability to shape our rum with care and refinement.

This balance comes from close attention to detail, repeated tasting, and a deliberate approach to making rum that feels clear, expressive, and distinctly our own.
